SIAL, held from 17th to 21st October 2026 at the Paris Nord Villepinte exhibition centre, reaffirmed its standing as a major global gathering for the food and beverage industry. The five-day trade fair brought together approximately 300,000 professional visitors, of whom around 70% were international, alongside 8,000 exhibitors representing 190 countries.

The exhibition floor showcased more than 400,000 products and provided a platform for over 650 start-ups. India served as the guest of honour and country partner for the 2026 edition, highlighting its growing agri-food sector and expanding middle class. Among participating nations, Italy, France, Spain, Turkey, China, the Netherlands, Greece, Poland, Belgium and India occupied the largest shares of floor space, while from the category perspective, savoury grocery, bakery, pastry and confectionery, meat, frozen foods and dairy products were among the dominant products showcased across a total of 12 exhibition halls.

As ever, the showgrounds served as a valuable barometer for emerging product trends, consumer preferences and technological developments across the global food ecosystem. In the domain of flavour (and colour), products incorporating ube, a sweet purple yam originating from the Philippines, gained notable traction across biscuits confectionery, and beverages. Matcha remained widely popular in confectionery and snack items, while concepts inspired by Dubai chocolate continued to influence various sweet categories. Manufacturers also introduced unconventional food combinations, such as olives stuffed with almonds or preserved in orange juice, alongside coated freeze-dried fruits.

Elsewhere, interest in health and wellness remained undimmed, driving significant product reformulation across multiple categories. High-protein formulations continued to appear widely in everyday staples including pasta, tortilla wraps, snack bars, yoghurts and desserts. Probiotic claims, clean-label sourcing, and free-from attributes – covering gluten-free, sugar-free, and allergen-free options – were heavily represented, while the beverage sector saw the expansion of beauty drinks, collagen-infused waters and functional shots, and dates were increasingly utilised as natural sweeteners in categories such as chocolates and jellies.

Looking ahead to 2028, show organisers revealed plans to expand SIAL Paris into a dual-venue format, operating simultaneously across Paris Nord Villepinte and Paris-Le Bourget. This operational shift is intended to alleviate overcrowding, enhance visitor comfort and provide adequate space for long-term growth. The two locations will function as complementary parts of a single integrated event, with Paris Nord Villepinte retaining a substantial portion of the exhibition areas, and Paris-Le Bourget becoming home to a number of specific categories but also accommodating new spaces dedicated to culinary demonstrations, tasting sessions, professional competitions and networking events.

This next, expanded, edition of SIAL Paris is scheduled to be held from 22nd to 26th October 2028.
